Ingredients

Sauce

  • 3 tbsp soy sauce
  • 1 tbsp peanut oil
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tbsp hot honey

Stir fry

  • 1.5 lb boneless, skinless chicken breasts, sliced thin against the grain
  • 2 tbsp neutral oil, such as avocado or canola
  • 1 large bell pepper, sliced
  • 2 cups broccoli florets
  • 1 medium carrot, sliced on a bias
  • 3 garlic cloves, minced
  • ¾ tsp ground ginger
  • 4 green onions, whites and greens sliced separately
  • Cooked rice, to serve

Steps

  1. Make the sauce. Whisk together the soy sauce, peanut oil, rice vinegar, cornstarch and hot honey. Set aside.
  2. Sear the chicken. Heat the neutral oil in a large skillet or wok over high heat until just smoking. Add the chicken in a single layer and cook without moving for 1–2 minutes, then stir and cook until just white throughout, 1–2 minutes more. Breast dries out fast, so don’t overcook it. Move to a plate.
  3. Cook the vegetables. In the same pan, stir fry the broccoli, carrot and bell pepper 3–4 minutes until crisp-tender, adding a splash of water if the pan gets dry.
  4. Add the aromatics. Push the vegetables aside and add the garlic, green onion whites and ginger to the center. Cook 30 seconds, until fragrant.
  5. Sauce it. Return the chicken, pour over the sauce and toss to coat. Cook about 1 minute, until the sauce thickens and glazes everything.
  6. Serve. Spoon over rice and top with the green onion greens.

Notes

  • Velveting: for extra insurance against dry chicken, toss the sliced breast with 1 tsp cornstarch and 1 tsp soy sauce (taken from the sauce amounts) and let it sit 10 minutes before cooking.
  • Heat: the hot honey covers both the sweetness and the heat. Add a pinch of red pepper flakes if you want more kick.
  • High heat and an uncrowded pan make a good stir fry. With a smaller skillet, sear the chicken in two batches.
